Sunless Year - 8%
Oak Fermented Baltic Porter
Brewed with Pilsner, Munich, and a variety of Crystal and dark specialty malts, Sunless Year was fermented entirely in 3rd use whiskey barrels with our house lager yeast. It was then left to mature and condition at a cool temperature for 4 weeks.

2016 Bourbon Barrel Aged Bonne Nuit - 9.99%
Belgian-Style strong ale brewed in the tradition of the great Belgian strong ales and hopped in the American tradition with Centennial, Cascade, and Columbus. This version was aged in Kentucky Bourbon Barrels for 12 months.

2016 Bourbon Barrel Aged King's Head - 9.5%
King's Head is our Double Oat Brown Ale, brewed with a large portion of malted and unmalted oats, premium two row barley, and specialty English Chocolate and Crystal malts. Fermented with an expressive English ale strain, this batch was then transferred into fresh Kentucky Bourbon barrels and left to age for a full year.

Double Ron Hawaii - 9.6%
Barrel Aged Brett Double IPA
Double Ron Hawaii is our 3rd collaboration with Ron Jeffries of Jolly Pumpkin Artisan Ales out of Dexter, Michigan. This Imperial version of Ron Hawaii IPA is brewed with Pilsner malt, Pale Malt, flaked barley, and flaked rye. It was heavily hopped with Experimental hop 438, also known as "Ron Mexico", and New Zealand Waimea. After initial fermentation in stainless, it was transferred into oak puncheons, where it continued to go through a secondary Brett fermentation for 5 months. It was then moved back into stainless tanks and dry hopped with a healthy dose of HBC 438.

Demonteller - 5.1%
Saison Fermented in Oak
A mixed culture Saison hopped with Galaxy and Mosaic. Demonteller was fermented and aged in one of our foudres, creating a delicate oak character that balances out a subtle acidity.

The Hart - 6%
Barrel Fermented Saison
A Saison brewed with Pilsner, Vienna, and Wheat malt, and hopped with Loral and French Strisselspalt. The Hart was fermented with a house mixed culture in neutral wine barrels, where it continued to age for a number of months. Refermented in the bottle with Brettanomyces.

The Seer - 6.5%
Foudre-Aged Saison
The Seer is a hoppy Saison brewed with Pilsner Malt and Wheat, and hopped aggressively with Galaxy and EKG. This batch was fermented with one of our house Saison cultures, and aged in an oak foudre with Brett. After spending 4 months in oak, The Seer was dry hopped with Galaxy and EKG, and bottle conditioned with Brett.

Three Fates Pilsner - 4.8%
Unfiltered Czech-style Pilsner brewed with old world German pilsner malt and Czech Saaz hops.

Five of Swords - 6.5%
IPA
Brewed in collaboration with our friends at E Nine Brewery in Tacoma, Five of Swords is an IPA brewed with a simple malt bill of Two Row, Pilsner, and a touch of malted oats, and hopped late in the boil with large amounts of Vic Secret, Enigma, and Motueka. It was then run through whole leaf Citra and Simcoe on the way to the fermenter, where it was fermented with one of our favorite English strains, and later dry hopped with with even more Vic Secret, Enigma and Motueka.
